Split Pea Burgers

My super-easy split pea burgers.

150g dried Yellow Split Peas
1tbls Tomato puree
2tbls Mayonnaise
1tsp Paprika

1. Soak the peas overnight in water.  Drain and rinse well.

2. Place the peas in a saucepan, cover with water, bring to the boil and continue to boil until fully cooked (around 30 minutes), skimming the scum from the top of the water when necessary.

3. Drain the chick peas and place in a bowl.  Add the remaining ingredients and either blitz with a stick blender or mash with a masher until well combined.  It doesn’t matter if not all the peas are completely pulverized; having a few solid ones improves the texture.  Leave until it is cool enough to shape with your hands (this should only take a couple of minutes).

4. Take a handful of the mixture and roll into a ball, then flatten it so that it makes a burger shape about 5cm in diameter.  Repeat with the remainder of the mixture.  You should get 6 burgers.  Either serve immediately or warm them in the oven until you are ready to eat.

I was using minimal ingredients for this recipe on purpose, but a few chopped spring onions would be lovely in the burgers.  I served them with steamed broccoli, but they would go equally well with a salad, or any other vegetables which you have available.
